Ramps 'N Taters


1 pound bacon

6 medium Yukon Gold potatoes, peeled and diced

1 1/2 pounds ramps, cleaned and chopped

Kosher salt and freshly cracked black pepper to taste

Cook bacon in skillet until crisp then remove from pan and set aside. Remove all but two tablespoons of the bacon drippings, then fry diced potatoes about five minutes. Add the chopped ramps and continue frying until potatoes are well done — about 15 minutes. Add salt and pepper to taste. Crumble fried bacon on top of the potatoes and ramps and serve immediately. Traditionally served with scrambled eggs and biscuits.
